I love the idea about allowing vendors around the square in empty spaces. I also believe they should be allowed in more places than just the square. When you drive through Austin, you will see food trucks everywhere! The places I liked the very best, were the ones that had trees around them for shade. It is hot in Texas, and shade is a must! I also love the ones that have picnic tables outside to sit and enjoy the food. There are some areas, where the grounds around the food trucks are so inviting that people would flock. This is a way for really great cooks to start out living their dream, making wonderful, affordable food. The citizens get to enjoy much more variety and eat local! Also, we already have a resource for handling grease. Yay for food trucks!!
